CCFRA have produced "Pasteurisation: A Food Industry Practical Guide" an updated guide on pasteurisation which aims to help processors set manufacturing standards that allow for the consistent production of safe foods. CCFRA says pasteurisation is assuming a greater prominence in processing & preservation as a result of the higher demand for minimally processed products. The CCFRA guide deals with the principles of pasteurisation & examines the use of the process in a wide range of manufacturing conditions, including in relation to the food's pH, curing, format, composition and packaging criteria. The guide also explains how pasteurisation process should be validated and tabulates a list of typical treatments.
