The shelf life of beverages is governed by the rate of deterioration attributable to 3 main factors - microbial growth, interaction between the beverage and the outside environment, and interaction between the beverage's components and the packaging material. The major physicochemical and microbiological characteristics of mineral waters, fruit juices, carbonated drinks, cold tea, beer, energy drinks, wine and spirits are surveyed from the viewpoint of their packaging requirements, and suitable container materials are discussed. Particular reference is made to the use of PET.
